Mission: Crispier Crust

Just out of the oven. Still too hot to slice.



  1. Feh. Basically a round loaf of French bread. Needed more kneading for stronger gluten to hold bubbles, I think. There may not have been enough salt or sugar. Try, try again.

  2. Today's attempt was much more satisfactory. I mixed and kneaded by hand using a recipe from Jacques Pepin. Longer rise, proof and baking times also helped. I may be approaching the limits of generic flour, generic yeast and no equipment.
